- Shaking Green: Gently shake the tea leaves in a tea sifter to slightly damage the edges of the leaves, releasing their aroma.
- Stir-frying green tea: Using high temperature to quickly stir-fry tea leaves, stopping fermentation, and locking in aroma and color
- Rolling: Rub the fried tea leaves into strips to make the tea flavor easier to brew.
