by Aura Cocina Mexicana
This 4.5-hour tour in Mexico City includes a guided visit to a local market followed by an authentic Mexican cooking class. The experience begins with a walk through the market to select fresh, local, and sustainable ingredients needed for the cooking session. After the market visit, participants move to the kitchen where a professional chef leads the preparation of a four-course lunch featuring essential dishes that represent the essence of Mexican cuisine. Printed recipes are provided to guide each step of the cooking process. Alcoholic beverages are included during the cooking and dining portions. The menu typically includes Mole Blanco served with chicken, but alternatives such as panela cheese or mushrooms can be requested in advance. An apron is supplied for use during the class. Guests should wear comfortable clothing and shoes and avoid scarves, long necklaces, or jewelry while cooking. This activity is not suitable for people with nut allergies. Gratuities are not included.
Cooking-studio and Mercado tour
The experience starts at a cooking studio located in Roma Norte, where participants receive a choice of Agua Fresca, premium Mexican coffee, or an herbal infusion, served with a traditional Mexican appetizer while learning about Mexican cuisine's history. Afterwards, there is a guided walk to the nearby Mercado de Medellín for a market tour that includes tastings such as tortillas made from native corn, raw cacao, Oaxacan chocolate, seasonal fruits, and for those willing, edible insects, a customary Mexican food. Returning to the studio, guests take part in a hands-on cooking class preparing four traditional dishes, including White Mole, which is referenced in "101 Reasons to Taste the World." The session concludes with a meal of the prepared dishes, accompanied by artisanal mezcal, Mexican craft beer, or fine Mexican wine.
