by Udonzin Beat
This 90-minute shared class takes place in a Michelin-listed restaurant in Osaka. Participants learn how to make handmade Sanuki-style udon noodles, starting with kneading the dough using their feet to create a firm yet smooth texture. The instructor provides step-by-step guidance suitable for beginners and children. After preparing the noodles, the chef cooks them and serves the udon hot or cold in special bowls with a broth made from natural ingredients including kombu, shiitake mushrooms, and katsuobushi (bonito stock). Participants can taste the udon they made and receive a recipe to take home. The instructor takes photos during the class and shares them afterward. Japanese sake or beer may be enjoyed during the class, but drinks are not included. Side dishes such as tempura or extra udon can be ordered separately but are not included. The class requires at least two participants; those joining alone or with children should contact the operator in advance to arrange a suitable session. The restaurant was featured in the Michelin Guide from 2018 to 2023. Participants should wear clothes suitable for getting messy and arrive on time, as regular restaurant service resumes after the class. Grouping with other guests may occur.
