This hands-on cooking class in Paris lasts about two and a half hours and focuses on preparing three classic French pastries: eclairs in chocolate and vanilla, chouquette, and choux filled with cheese and cream. Participants receive an apron and all necessary utensils to handle every step of the baking process. The lesson is guided by a pastry chef who explains each technique clearly to ensure successful results. The session starts with making choux pastry by heating water, butter, and salt, then adding flour until the dough forms. Eggs are mixed in one at a time before piping the dough onto baking sheets. The choux pastries bake at 200°C for 20 to 25 minutes until golden and crisp. Meanwhile, the instructor prepares pastry cream by heating milk and combining it with a mixture of egg yolks, sugar, flour, and cornstarch, cooking until it thickens. After baking, the éclairs are sliced and filled with chocolate, vanilla, or coffee pastry cream using a piping bag. The final step is glazing the éclairs by dipping them into a dark chocolate and butter mixture. Tea and coffee are included to enjoy with the pastries at the end of the class. The pastry chef is available to answer questions and offer culinary advice throughout the lesson.
Choux Pastry Preparation and Eclair Assembly
The class begins with making choux pastry by heating water, butter, and salt until the butter melts. Flour is added and mixed until the dough pulls away from the pan. Eggs are incorporated one by one into the dough. The dough is then piped into sticks on parchment-lined baking sheets and baked at 200°C for 20 to 25 minutes until golden and crisp. Meanwhile, pastry cream is made by heating milk and whisking egg yolks, sugar, flour, and cornstarch, then cooking the combined mixture until thickened. Once baked and cooled, éclairs are sliced open and filled with chocolate, vanilla, or coffee pastry cream. A glaze is prepared by melting dark chocolate with butter, and the tops of the éclairs are dipped into this glaze.
