The tour begins with a 15-minute walk from Cork city centre to Rebel City Distillery, located in the former Ford Car Factory in the historic docklands area overlooking the River Lee. Established in 2020, this is Cork city’s first distillery in 50 years and the only one within the city centre. The guided tour lasts about one hour and takes place inside the boutique craft distillery. Visitors learn about the distillation process while surrounded by the aromas of Indian botanicals used in their spirits. The guide explains the founder’s background and the inspiration behind Maharani Gin and Ireland’s only Absinthe, both produced on site. The tour concludes with a tasting that includes a Gin and Tonic, plus neat samples of gin and absinthe, each served in 10 millilitre measures.
