Each morning, owner-chef Kaneko personally visits Toyosu Market to handpick the freshest seafood. With meticulous preparation methods such as aging and dehydration, combined with a specially blended rice seasoned with red vinegar, the sushi rice achieves perfect harmony with the toppings. Kaneko's masterful techniques bring out the true essence of each ingredient. A curated selection of seasonal sake and shochu is also available, allowing guests to choose pairings according to their tastes or mood. With only six simple counter seats, this refined sushi bar is perfect for both everyday dining and celebrating special moments."
