The tour begins at Palazzo della Mercanzia, a 14th-century building that was once the center of the city’s commercial activity. Participants start with a traditional local sweet. Next, the group visits one of Bologna’s oldest salumerias to learn about regional pork products and famous pastas. The first tasting takes place at the oldest osteria in the world, where guests sample Parmigiano Reggiano, Prosciutto di Parma, Mortadella di Bologna, and other regional cold cuts, accompanied by a glass of local wine. After this, two types of fresh, homemade pasta prepared specifically for the group are served at a local trattoria, paired with another glass of local wine. Guests may also choose to have an espresso or macchiato at this point. The tour then moves to Quadrilatero, Bologna’s main food market known for its medieval streets and diverse stalls. Here, participants taste aged balsamic vinegars from Modena, with varieties aged 8, 12, and 25 years, along with artisanal gelato and a local liquor. The private format allows flexible start times and a more intimate experience tailored to guests’ preferences. Transportation and gratuities are not included. Children under two years may join without a ticket but must be notified when booking. The itinerary and menu may change depending on availability and other conditions. Dietary requirements should be communicated in advance, noting that gluten-free and vegan options are not available. Pork meat is a central part of the tastings, so guests who do not eat pork should inform the organizers promptly.
