The class begins with an introduction to jerk cooking, a traditional Jamaican method of seasoning and slow-cooking meat such as pork, chicken, beef, or fish over an open fire or barbecue grill. Nicole explains the regional spices used in jerk seasoning, including scallions, thyme, pimento (allspice), and cinnamon, and describes how the flavor develops from a spicy heat to a blend of aromatic spices. Participants learn different ways to apply jerk seasoning to create authentic West Indian flavors. During the class, guests cook alongside others at Nicole's table, preparing meals that include lunch and dinner. Alcoholic beverages, snacks, tea, and coffee are provided throughout the session. Recipes are shared so participants can recreate the dishes at home. The class does not include hotel or port pickup, nor transportation to or from the location. Children must be accompanied by an adult, and any dietary requirements should be communicated at booking. The class requires a minimum of four participants and follows health precautions such as hand washing and mask use if guests show flu-like symptoms.
We are unable to offer transportation to our home, but we do provide customized directions and information for all of our guests. When you arrive at our home, we always meet you and talk with the taxi driver to make sure he or she will pick you up on time when we are finished. We work with cruisers, hotel guests, and BnB guests all the time so we can help you find our way to our home via taxi or a car rental.
