by Nicole's Table
Nicole's Table in Antigua offers a 4-hour Jamaican jerk cooking class held in a West Indian home with a view of the Caribbean Sea. The class begins with an introduction to jerk cooking, a traditional Jamaican method of seasoning and slow-cooking meat such as pork, chicken, beef, or fish over an open fire or barbecue grill. Nicole explains the regional spices used in jerk seasoning, including scallions, thyme, pimento (allspice), and cinnamon, and describes how the flavor develops from a spicy heat to a blend of aromatic spices. Participants learn different ways to apply jerk seasoning to create authentic West Indian flavors. During the class, guests cook alongside others at Nicole's table, preparing meals that include lunch and dinner. Alcoholic beverages, snacks, tea, and coffee are provided throughout the session. Recipes are shared so participants can recreate the dishes at home. The class does not include hotel or port pickup, nor transportation to or from the location. Children must be accompanied by an adult, and any dietary requirements should be communicated at booking. The class requires a minimum of four participants and follows health precautions such as hand washing and mask use if guests show flu-like symptoms.
Jerk-Spice Introduction
Jerk cooking is a traditional Jamaican method for preparing pork, chicken, beef, or fish by seasoning the meat with local spices such as scallions, onion, thyme, pimento, cinnamon, nutmeg, peppers, and salt, then cooking it slowly over an open fire or grill. The initial flavor is hot from the pepper, followed by a blend of the other spices. Jerk has become a regional dish with many variations. In Nicole’s class, she explains the jerk spices, shares the history of jerk, and describes different ways to use jerk seasoning to add West Indian flavor to food. Lunch is served on a large veranda overlooking the Caribbean Sea and nearby hummingbirds. Vegetarian options can be requested.
