Overview

Florence is home to the Sant’Ambrogio Market, a place where locals shop for fresh ingredients. This cooking class lasts about four hours in the morning and includes a guided visit to the market with a professional chef to select fresh, local products. Afterward, the group moves to a traditional Tuscan trattoria where participants learn to make pasta dishes like tagliatelle and ravioli, as well as tiramisù, all prepared from scratch. The class is small to allow personal attention from the chef. During the session, participants taste Tuscan appetizers and enjoy unlimited local wine. At the end of the class, they sit down to eat the meal they have cooked. Aprons and all cooking utensils are provided. The class finishes with a certificate of completion. For afternoon sessions and tours on Sundays or bank holidays, the market visit is not included and the class duration is three and a half hours, focusing solely on the cooking and meal.

Cooking-class and Market-visit

Participants meet in central Florence and, during the morning class (except Sundays and holidays), accompany the chef to Sant’Ambrogio Market to select fresh local ingredients. Then, in a Tuscan trattoria kitchen, they prepare sauces such as ragù and tomato, knead pasta dough made from eggs and flour, and make tiramisù while the dough rests. After a break with Tuscan appetizers and culinary stories, they roll out the dough to form tagliatelle and ricotta-filled ravioli. The class concludes with a meal of the prepared dishes served with house wine.
