The class lasts three hours and includes hands-on instruction from expert teachers who demonstrate traditional Italian pasta-making techniques using only flour and eggs. Participants learn to shape several types of fresh pasta, including ravioli, tortelli, and fettuccine, in a small group setting. After preparing the pasta, guests enjoy both lunch and dinner featuring the dishes they made, served with two specially prepared sauces. The meal is accompanied by organic Tuscan wine from the operator’s own cellar, named "Dalle Nostre Mani." Dining occurs around a communal table to encourage conversation similar to a family meal. English recipe cards are provided for guests to take home and recreate the pasta dishes. The class includes a small cultural fee payable on site. No additional stops or transportation are included. If the minimum number of participants is not met, the operator may reschedule the class or offer a refund.
