This three-hour professional fresh pasta cooking class takes place in Rome inside a former pasta factory, known locally as a "pastificio," where fresh pasta is traditionally made and sold. The class is led by experienced instructors who have been recognized in the Gambero Rosso guide since 2017 and ranked among the top ten pasta factories in Rome. Participants learn how to make fresh artisan pasta by hand using authentic Italian methods inspired by recipes from the instructors’ grandmother. The session covers the entire process of preparing pasta dough and shaping different types of pasta, focusing on healthy preparation techniques that can be used at home. The class concludes with a dinner featuring the pasta made during the lesson. All necessary ingredients and equipment are provided in the professional lab setting.
Pasta Workshop with Chef Angelo
Chef Angelo teaches how to prepare various homemade pasta types in a workshop rated among the "Best 10 pasta factories in Rome." The session begins with making handmade pasta using spelt, buckwheat, and wholemeal flours. Participants create thin puff pastry, learn safe food cutting techniques, and make three ravioli types, tortellini, and fettuccine served with two traditional Italian sauces. The lesson includes tasting hand-cut homemade ham, cooking all pasta and sauces prepared, and drinking Italian wine. An express tiramisu dessert is prepared afterward. Gluten allergic and vegan guests can be accommodated. Each participant receives a professional chef's hat with the "Pastificio Faini" logo. Different sauces are featured on weekdays: carbonara Monday-Saturday; Cacio e Pepe Tuesday through Friday. Available in Italian and English.
