Overview

Valencia is known for its seafood paella, a coastal dish made with fresh local ingredients. This 3.5-hour cooking class focuses on teaching the authentic Valencian seafood paella recipe, including the traditional salmorreta sofrito base used by local chefs. The class begins with a visit to Ruzafa Market, a less touristy neighborhood market where fresh ingredients are sourced. Participants learn to prepare the paella from scratch, using Albufera rice and techniques to create the socarrat, the crispy rice crust valued in the dish. While the paella cooks, the class includes a sangria-making workshop paired with sampling several traditional tapas. The session concludes with a shared meal featuring the paella prepared by the group, accompanied by local wine, tomato salad, mistela, and homemade dessert. All cooking ingredients and equipment are provided during the class. This small-group activity offers hands-on instruction and includes dessert, coffee, mistela, tomato salad, tapas, sangria, wine, beer, and soft drinks. Note that Ruzafa Market is closed on Sundays, so the market visit cannot be included then.
